Molasses substitute

Melissa writes, "Hi - I am looking for a molasses substitution. Where I live, I cannot find molasses and wish to make gingerbread cookies. I have a German recipe for gingerbread and it calls for honey, but it just isn't the same. Any help would be appreciated!"

Answer: Melissa, I know of no good substitution for molasses. It is simply a must for making gingerbread and gingerbread cookies. Cane syrup is a thought – but, that would be even harder to find.
