Pan size

Pat writes, "If I have a recipe that calls for an 8" spring form pan, but I've got a 9" pan, how much do I have to increase the recipe for in order to accommodate the bigger size? (Or should I just bit the bullet and buy an 8" pan?)"

Answer: Pat, you do not necessarily have to increase the recipe - however, this kind of substitution is a definite pitfall when baking. You might try using your 9 inch pan and reducing the baking time. But, make sure you watch carefully.

My real recommendation is to bite the bullet - you can always use another pan!!
